Among many reasons to love the onset of fall in Florida is the start of stone crab season in state waters. Stone crabs can be legally harvested from October 15th through May 15th.
Valued for deliciousness, fresh caught stone crab meat is a favorite among local chefs and diners.
Capture of these crustaceans is not only fairly simple, but it’s also sustainable. After removal of the claw, the crab is released to regrow its claw.
In addition to legal harvest season dates, claw size and catch limits, there are a number of other measures to take to ensure compliance. Review the rules here.
There are right and wrong ways to remove the claw. Watch this helpful demonstration.
